5. To serve, cut the hot cake into thin slices with a knife, then fill with strawberries and whipped cream. They are a little crumbly when you open them, so I like to sprinkle the extra crumbs over the whipped cream as a garnish. You may want to store any leftover shortbread after it cools in an airtight container and microwave it briefly before assembling more shortbread (my boyfriend suggested this and it was great). Delicious and easy!
PS You can completely retain the juice of the trout strawberries and use them for other purposes – dry them on shortbread or other desserts, boil them in a cornstarch slurry to thicken strawberry jam, or put them into strawberry recipes. Mousse like me 🙂
