Slow Cooker Tamale Pie is a brownie version of the classic tamales that is very low in fat and calories. It is easy to prepare, it can be done in your yard. It’s like eating a tamale on top! I would serve a green salad or roasted zucchini on the side.

This is a great batch, but the good thing is that it tastes even better the next day and you can freeze the leftovers for quick and easy dinners. As much as I love the taste of burritos from my favorite Mexican restaurant, they can make up a lot of my daily calorie count. The solution? Soon after I quit my job and had my kids, I learned how to be a “coupon lady.” My hobby. I love “couponing” like other people love fishing, hiking, sewing, and scrapbooking. (This was before the “couponing extreme” and I wasn’t there yet.) One day when my oldest was two, I was coming home from the store with my bags and she said, “Mom, what have you got? It’s your job.” ? “And I remember my tongue is what I do. If I buy something because it’s “on sale”. I’ll spend an hour planning a trip to the drugstore, line up my coupons and all I could do was get the best gift that was less than $5 total, then if the nice high school girl at the register told me my total was $7. d look at it. , “Oh, can’t be right. It’s probably $5. I must have missed a coupon or something.” So I went from “Coupon Lady” to “Crazy Coupon Lady”. I have to give a shot to the staff at the Valparaiso CVS Pharmacy, though, because they are among the best. They were so good to me when I was crazy.
I love to do good, and I love using coupons when I do, but I’ve reached a point where it’s something I “use” and not something I “make”. My husband keeps track of our bills and keeps track of where our money goes so we can adjust our finances if necessary. We like to manage our money well and enjoy finding creative ways to save money.
